About this session
Food safety depends on what happens throughout the food journey. A delivery left at reception, an overloaded refrigerator, a buffet waiting for a delayed meeting or an ingredient substitution that nobody communicates can undermine otherwise careful preparation.
This session helps participants understand biological, chemical, physical and allergen hazards and connect them with everyday workplace food handling. They examine hand hygiene, separation, cleaning, safe sourcing, storage, cooking, cooling, reheating and service.
Particular attention goes to allergen information and the handoffs between caterers, reception teams, kitchen staff and event organizers.
The longer programs develop these principles into practical improvements to food flow, responsibilities, monitoring and corrective action.
Participants learn to identify what they can change within their role and what requires the person responsible for food safety, suitable equipment or a different service arrangement.
